Ingredients
200g of whole Greek yogurt (or well-drained light ricotta)
120g of biscuits without added sugar (or classic pavesini)
2 tablespoons of unsweetened cold coffee
2 tablespoons of bitter cocoa powder
1 generous tablespoon of erythritol (or equivalent natural sweetener or sweetener drops of your choice)
Procedure
Finely crumble the biscuits in a large bowl, until they resemble coarse sand.
Add the cold coffee a little at a time, stirring with a spoon to evenly absorb the liquid and soften the mixture.
In another bowl, mix the Greek yogurt with the erythritol until you obtain a smooth, creamy consistency .
Fold the softened biscuits into the yogurt mixture, stirring slowly to prevent the mixture from becoming too runny. The result should be firm but workable.
With slightly damp hands, take small portions of dough and form uniform balls of about 20-25 grams each.
Dust each truffle with bitter cocoa powder.
Arrange the truffles on a tray lined with baking paper and place in the refrigerator for at least 1 hour , so that they compact perfectly.

For a thicker consistency, you can add a spoonful of almond flour to the mixture.
