When I get home after a long, hot day, I crave something delicious, quick to prepare, and that gives me the satisfaction that only “real” food can provide. And this pan of baked feta with cherry tomatoes has become one of my go-tos.

The first time I tasted it was during a vacation in Greece : a very simple dish, served piping hot with a basket of crusty bread, the scent of oregano in the air, and the sea just a few meters from the table. Since then, every time I prepare it, I feel like I’m back there, even if I’m simply in my kitchen.

It’s made in 5 minutes with 5 ingredients I almost always have at home. It pops in the oven and does everything by itself. The cheese (feta) becomes creamy, the cherry tomatoes caramelize, and the whole thing is perfect for scooping up with a piece of toasted bread. It’s light yet delicious, rustic yet fresh. Excellent as a vegetarian main course, but also as an appetizer or a summer dish to share. And I’ll tell you the truth: the simpler it is, the more I like it.

Ingredients for 2 people

200g Greek feta

150 g of cherry tomatoes (cherry, date or mixed)

2 tablespoons of extra virgin olive oil

1 pinch of dried oregano

A few fresh basil leaves (optional but recommended)

Black pepper to taste

Rustic bread or pita to accompany

Preparation 

    Prepare the ingredients

    Wash the cherry tomatoes and cut them in half.

    Gently pat the feta with paper towels to dry it a bit.

    Assemble

    Place the feta in the center of a small baking dish.

    Distribute the cherry tomatoes around it.

    Season with oil, oregano and a sprinkling of pepper.

    Cook

    Bake in a static oven at 200°C for approximately 20-25 minutes .

    In the last 2-3 minutes you can turn on the grill to make it golden and irresistible.

    Servants

    Freshly baked, garnish with a few fresh basil leaves.

    Serve it with toasted bread, a warm pita, or some bruschetta.
